Organically Reared Shetland Mutton

Due to demand from customers, we will be offering a limited supply of Organically-Reared Shetland Mutton for the first time in 2009-2010. Mutton is meat from sheep over two years old. It has a strong flavour and firm texture which benefits from longer, slower cooking than lamb. Ewes will be chosen from our flock in late autumn for careful fattening on autumn grass and organic grain, and then hung at our local abattoir for approximately two weeks to further develop the flavour.

Mutton is enjoying a comeback, and some excellent recipes can be found on the Mutton Renaissance website. And longer cooking doesn't mean more work or waiting - mutton is perfect for simmering in stews, or to simply pop into the slow cooker in the morning for an easy dinner.
